The Holiday Bikini – A Recipe

WHere is a home-style take on a beverage found on a new menu. This is a large-volume premix that's loaded with the flavours of a holiday season, which makes it ideal for hosting a celebration. Reserve the remaining syrup you can use for breakfast cocktails, puddings, or for more rounds of the drink.

Bikini Recipe

Makes enough for 10 people

To make the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Place every items in a pan, heat until it reaches a light boil, stirring so the sugar melts. After that, take off the stove allowing it to cool entirely. Decant into a sterilised bottle, seal keeping it chilled, where it will keep for about four weeks.

To make Cocktail Base: Combine all the liquid ingredients into a large bottle, leave to sit for one hour, then strain best through cheesecloth, making it fully clarified.

When ready to serve: Pour 85ml of your batch mix into your cocktail shaker packed with ice, and agitate carefully for about 60 seconds to chill. Pour into a cold coupe glass or similar, decorate with a few cranberries and complete it by giving it a light spray with the mandarin essence above the glass.
